The Crazy Cork Cellar

Special, age-worthy wines deserve special care. Most often they are bold reds with lots of tannins that will improve over time. Occasionally you will find some better white wines that also deserve special care. If you’ve ever seen a real vineyard cellar you will remember that the wines are stored horizontally to keep the cork damp, which prevents the cork from drying out and oxygen from spoiling the wine, and the temperature will usually be 60 degrees or less, the ideal temperature for aging. 

At The Crazy Cork we recently installed an electric “cellar” to store those special wines. Whether it is for a special occasion or you just feel like you deserve it today give one a try. It might just be your wine “aha” moment.

This wine is a full and intense expression of Pinot Noir, well balanced with toasted oak and vibrant acidity on the finish.
  • Hanzell Sebella, Sonoma Valley, California
    Fermented in stainless steel and aged in neutral French oak barrels for six months, Hanzell “Sebella” captures our classic minerality, bright fruit, and signature aroma of Chardonnay flowers in bloom.
    Bursting with aromas of orange blossom, honeysuckle, mango, lemon verbena, lime zest, and a lifted chalky minerality, the nose is bright and effusive. Pear, tangerine, lime, Meyer lemon, kumquat and hints of arugula carry on a textured and buoyant long juicy and tremendously delicious finish.
  • Sanford La Rinconada Vineyard, Santa Rita Hills, California
    Black tea, leather, fennel, and raspberries all jump out of the glass. This wine is delicious now yet has the balance and structure to age gracefully for some time. This wine is a natural for richer fish dishes, roast chicken and even game.
  • Cristom 2024, Willamette Valley, Oregon
    The 2024 Pinot Noir Willamette Valley comes mainly from purchased fruit and a small amount of estate fruit. It was fermented with 42% whole clusters and matured for nine months in 16% new French oak. It has open-knit aromas of red and black cherries, charcuterie, damp earth and fallen leaves. The medium-bodied palate pairs concentrated fruit with well-integrated oak spice. It’s structured by silky tannins and juicy acidity and has an easygoing finish. 4,895 cases were made.
  • Cristom Mt. Jefferson Cuvee 2024, Willamette Valley, Oregon
    Pronounced floral aromas suggesting roses and lavender combined with blue fruit and plum, accented by subtle hints of earth. The palate is well-balanced with fresh acidity, showing off tart cherry and raspberry flavors.

    Black-cherry, stewed-blackcurrant, cassis, tobacco and cocoa aromas. It’s medium-to full-bodied with firm, polished tannins. Creamy and round with a solid, ripe core of fruit.
  • Lapostolle Cuvee Alexandre Cabernet 2022, Apalta Valley, Chile
    Deep red robe with purple bright shadows. Intense nose with spices and dark fruit, and a well integrated and subtle oak.  Juicy tannins open towards a dense mil palate and a long finish, with velvety tannins.
  • Halter Ranch Estate Cabernet, Paso Robles, California
    The 2021 Estate Cabernet Sauvignon exudes aromas of raspberry, olallieberry, cinnamon, caramel, and toasted oak. The palate is soft and mouth-coating upon entry. Dark blue fruit flavors, including blueberry and boysenberry, are framed by elegant, integrated tannins on the finish.
  • Louis M. Martini “The Gryphon” 2021, Napa Valley, California
    A blend of 91% Cabernet Sauvignon, 4% Cabernet Franc, 3% Merlot, and 2% Malbec, the Gryphon is a masterclass in blending. The Cabernet Sauvignon forms the backbone, delivering layers of blackcurrant, dark cherry, and plum, while the Cabernet Franc adds a touch of floral nuance and red fruit vibrancy. The Merlot contributes plushness and roundness to the mid-palate, and the Malbec lends a hint of spice and depth. Together, they create a wine that is both opulent and refined, with a velvety texture and a finish that lingers with notes of mocha, graphite, and a whisper of vanilla.

    Opening with rich, dark berry fruit at its core and a savory edge of wild herbs, graphite and cedar. The wine is dense and brooding with plump blackcurrant fruit moderated by a backbone of fine-grained, grippy tannins, which creates lovely tension and succulence. Perfect with ribeye steak, grilled or slow-cooked lamb with rosemary and thyme, braised beef short rib, char-grilled cheese burgers, mature cheddar and gouda, creamy blue such as gorgonzola.
  • Dry Creek Vineyards Cabernet, Sonoma County, CA
    Aromas of black cherry, plum, and fig, followed by mocha, violet and black pepper. A first taste of the full-bodied wine reveals flavors of black currant, boysenberry and blueberry. Hints of clove, coriander, bay leaf and green peppercorn bolster its richness, while firm tannins provide structure.     The Prisoner Cabernet Sauvignon has aromas of cinnamon bark, clove, Christmas cake, crushed rock layered with dried currant and fresh ground coffee. Palate is soft and plush with a full mid palate and sturdy lengthy finish. Flavors of black coffee, dried red berries, dominate with hints of holiday spices carrying through to the finish. 90% Cabernet Sauvignon with a touch of Petite Sirah, Syrah and Malbec.

  • Meadowcroft Cabernet 2023, Napa Valley, California
    The 2023 Napa Valley Cabernet Sauvignon reveals deep, expressive aromas of blackberry, raspberry jam, brambly black fruit, and subtle hints of vanilla, tobacco, and mineral. On the palate, layers of dark cherry, blackberry, and blueberry are accented by cracked black pepper and a touch of black tea. Soft yet structured tannins give this wine a grippy texture, leading to a lingering and satisfying finish.

    Full-bodied on the palate with ripe notes of crème de cassis and black cherry jam, with hints of red berry fruit on entry and vanilla, licorice, and baking spice leading into the midpalate, which shows complex savory notes of cedar, tobacco leaf, and leather. The lengthy and continually changing finish progresses from ripe black cherry fruit flavors accented by baking spice and oak notes to ripe chewy tannins and balancing acidity that adds depth and freshness.

  • Chateau St Jean “Cinq Cepage” 2022, Sonoma County, California
    This wine opens with sultry aromas of dark plum and crème de cassis with a hint of lavender. The palate is plush and structured with layers of dark fruit, nicely integrated oak and rich, velvety tannins. We recommend decanting this wine, especially in its youth, to encourage these bold characters to open up and fully evolve. Pair with pork tenderloin and cherry compote, or grilled New York steak with a demi-glace for an ultra-decadent meal. Rewarding and ready for enjoyment now, the 2022 vintage is also well suited to age for 10-15 years in proper cellaring conditions.
  • Babylonstoren Nebukadnesar Red Reserve 2023, West Cape, South Africa
    Wondrous graphite and cedar element which seamlessly incorporates every other component – brambles, spiced black cherries, blueberries, plums, oregano, thyme, fresh walnuts and a beautiful floral element of violets and pansies. The velvety tannins produce ripples of sappy freshness and bring texture and context to the fruit; sleek, supple and sinuous. This opulent wine befits its royal name and has all the attributes of greatness. Deceptively approachable now but will grow in stature and complexity over the next ten years.

    Ruby red color. Aroma of pencil shavings and sweet tobacco with mulberry, cherries, and dark chocolate on the nose. Palate: A balanced fusion of dark-red berry and chocolate flavors with a soft mouth-feel and juicy, lingering finish.

    A fresh, vibrant nose with potpourri, morello cherries, briar and flowers. Not complex but so pure and fruit-forward with chewy, stemmy tannins providing firmness. Ripe fruit gives a “sweet,” approachable impression. 100% whole-cluster fermentation with carbonic maceration. Lovely.

    Bright cherry with lively fruit; fresh and elegant with soft tannins and a long and spicy finish.
  • Queiron, Rioja Vino de Quel “Mi Lugard” 2019, Rioja, Spain
    Great depth of colour with black cherry and violet glints. Red and black fruit aromas with a very sensual touch of ripeness. Some smoked nuances, spices, minerals and wood, which after the initial sensation of the fruit, thrills you with its balsamic hints of wild herbs and shrub land, such as rosemary and thyme, as well as subtle reminders of liquorice. Taste: A powerful, meaty attack, elegant and harmoniously balanced with no discordant edges. It all flows, with good backbone, good acidity and a long, lingering finish. Pure silk and elegance.
  • Lamadrid Single Vineyard Reserva Cabernet Franc, Mendoza, Argentina
    Sourced from Finca La Suiza, 100% Agrelo, with sandy loam soils. This imparts dark, earthy, and spicy aromas with ripe plums and blackberries. On the palate, it has a granular tannin structure that truly lingers in the fresh, detailed, and long finish. It pairs beautifully with game dishes.
  • Lamadrid Single Vineyard Reserva Malbec, Mendoza, Argentina
    Blackberry fruit on the nose with some black olive and sage notes. Creamy and dark-fruited, with a medium to full body and ripe, supple tannins. Savory freshness at the end. Vegan.
  • Foxen Syrah Single Vineyard 2021, Los Olivos, California
    A dusty nose that elevated into aromas of ripe red cherry, strawberry fruit leather, iron ore, ground black pepper, and hints of charcuterie spill from the glass.     Pale straw color revived by fine bubbles. Bouquet of brioches with a hint of apples and white flowers. Dry and balanced in the mouth with good length intensified by its fine bubbles.
  • Jansz Premium Cuvee Brut
    Aromas of honeysuckle, citrus zest and fresh strawberries from the Chardonnay and Pinot Noir fruit. Extended time on lees during secondary fermentation contributes to more complex aromas of nougat and roasted nuts. The palate is balanced with delicate fruit flavour, fine creamy texture and refreshing natural acidity.

The wine is refreshing on its own or pairs very well with fresh fish, cheese, and spicy cuisine.

    The subtle nose opens up with notes of citrus fruits, wild flowers and citrus blossom which give way to lime, lemongrass, and green apple.       • Guillaume Gannet “La Nymphe” Tavel Rose’. Rhone Valley, France
        This is a round, textured rose, a gorgeous, vibrant, dark, pink color. Loads of fruit on the nose and palate – strawberry, cherries, watermelon, peach, and nectarine. Nice dry, refreshing finish. This wine is not only pretty, but tastes delightful.
