2. Beef Tartar Appetizer
Celery coulis, chives, shallot, dijon, smoked sea salt, rosemary smoked cured egg yolk, parmesan cracker

Veal, sweet potato gnocchi, spring peas, pea tendrils, preserved lemon, whipped ricotta, fennel mushroom brodo, beech mushrooms, fronds.
