The Crazy Cork Cellar
Special, age-worthy wines deserve special care. Most often they are bold reds with lots of tannins that will improve over time. Occasionally you will find some better white wines that also deserve special care. If you’ve ever seen a real vineyard cellar you will remember that the wines are stored horizontally to keep the cork damp, which prevents the cork from drying out and oxygen from spoiling the wine, and the temperature will usually be 60 degrees or less, the ideal temperature for aging.
At The Crazy Cork we recently installed an electric “cellar” to store those special wines. Whether it is for a special occasion or you just feel like you deserve it today give one a try. It might just be your wine “aha” moment.

Pinot Noir

- Cristom 2024, Willamette Valley, Washington
The 2024 Pinot Noir Willamette Valley comes mainly from purchased fruit and a small amount of estate fruit. It was fermented with 42% whole clusters and matured for nine months in 16% new French oak. It has open-knit aromas of red and black cherries, charcuterie, damp earth and fallen leaves. The medium-bodied palate pairs concentrated fruit with well-integrated oak spice. It’s structured by silky tannins and juicy acidity and has an easygoing finish. 4,895 cases were made.

This wine opens with sultry aromas of dark plum and crème de cassis with a hint of lavender. The palate is plush and structured with layers of dark fruit, nicely integrated oak and rich, velvety tannins. We recommend decanting this wine, especially in its youth, to encourage these bold characters to open up and fully evolve. Pair with pork tenderloin and cherry compote, or grilled New York steak with a demi-glace for an ultra-decadent meal. Rewarding and ready for enjoyment now, the 2022 vintage is also well suited to age for 10-15 years in proper cellaring conditions.
