1. Amuse
Cucumber melon shooter, with pomegranate molasses
2. Beef Tartar Appetizer
Celery coulis, chives, shallot, dijon, smoked sea salt, rosemary smoked cured egg yolk, parmesan cracker.
3. Fish Course
Florida yellow tail snapper, asparagus soubise, cauliflower, preserved lemon, granny smith apple, radish, carrot, fennel, brown butter almond crumble, sunflower sprouts.
4. Meat Course
Veal, sweet potato gnocchi, spring peas, pea tendrils, preserved lemon, whipped ricotta, fennel mushroom brodo, beech mushrooms, fronds.
5. Dessert Course
Short cake
Strawberries, angle food cake, honey chantilly, sprouts, strawberry lemon gel, meringue.

67% Merlot, 33% Cabernet Sauvignon
Bernard Magrez — owner of iconic estates including Château Pape Clément — is known for meticulous vineyard work and consistently refined wines. This small 8‑hectare St‑Estèphe property, acquired in 2016, produces structured, modern Left Bank reds with depth and polish.
Decanter 94 pts: “Polished and finessed… tightly‑knitted cassis, juicy menthol, and a firm tannic finish suggesting excellent aging potential. Big‑shouldered but a welcome addition to St‑Estèphe.” (JA, 2020) - Chateau Martinet, Grand Cru St. Emilion:
65% Merlot, 35% Cabernet Franc
Once an 18th‑century hunting lodge, Château Martinet now produces one of St‑Émilion’s respected Grand Cru wines. Its sand‑gravel soils and careful vineyard work yield layered, elegant reds with appealing red‑berry character, regularly recognized at international competitions.

- Domaine de Pouy 2023 Cotes de Gascogne: This fresh, crisp and fruity wine is produced by the Grassa family, well-known winemakers in Gascony in the South West of France. It offers very delicate exotic and citrus notes. Perfect to be enjoyed as an aperitif and then with salads, seafood, fish, tapas and Asian food.
